The surface area under cultivation is very small in Avize : only 262 hectares of Chardonnay. The two most famous and oldest villages are Avize and Cramant where the Chardonnay was noted for its aptitude to create a fine mousse during the second fermentation in the bottle. The entire region followed suit when everybody realized that this grape variety created elegant and refined wines.
