IIn 1989, their son Denis VARNIER took over the vineyards upon completion of his degree in oenology. Denis wants to continue to work the vineyard and the wine in the traditionnal way instead of following the rest of the Champagne wich wants to industrialize their process. The use of the traditionnal horizontal press is one good exemple of his winemaking philosophy.
	Perhaps one day Pierre-Louis, Denis 's son, will perpetuate the tradition..
